Fruit Salsa

1 Bag Frozen Fruit mixture - Let thaw for about 30 minutes and chop to desired size pieces.(Fresh fruit is awesome if it's in season, but I don't have time to prep it all so I use frozen.)
  • 1-2 Tbsp White Sugar 
  • 1/2 - 1  Tbsp Brown Sugar 
  • 1-3 Tbsp of Fruit Preserves of your choice - any flavor (Will find this with Jelly and Jams.)
  • 1 Pkg (8 or 10 inch) Flour tortillas
  • Butter flavored cooking spray (Like PAM)
  • 2 Tbsp cinnamon sugar (Make your own using 1 C White Sugar and 1-2 Tbsp Cinnamon depending on how much cinnamon you like). Have cinnamon sugar mix in a bowl that you can dredge tortilla wedges in.

  • Directions
  1. In a large bowl, thoroughly mix chopped fruit, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
  2. Preheat oven to 350 degrees F.
  3. Spray each side of each flour tortilla with butter flavored cooking spray. Cut into wedges. Dredge tortilla wedges in cinnamon sugar and arrange in a single layer on a large baking sheet. 
  4. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool and serve with chilled fruit mixture.

Note: I make my tortilla wedges a day ahead and store in a ziplock bag to save time. I have my fruit thawed and chopped as well.  The next day I will mix as directed about 3-4 hours before it's time to serve. Enjoy!
